This roasted squash salad is a vibrant, fall-forward recipe featuring three types of squash—delicata, butternut, and spaghetti squash—paired with creamy blue cheese, crisp Bibb lettuce, and a balsamic glaze. It’s an easy vegetarian dish that works as a holiday side or a light weeknight dinner. Rich in texture, layered in flavor.

Ingredients

  • 1 delicata squash (sliced into rings)

  • 1 butternut squash (cut into half-moons)

  • 1 small spaghetti squash

  • Bibb lettuce or butter lettuce (washed and dried)

  • Good-quality blue cheese (crumbled)

  • Balsamic vinegar (or balsamic glaze)

  • Extra virgin olive oil (EVOO)

  • Kosher salt + freshly ground black pepper

Instructions

1. Roast the delicata and butternut squash
Preheat oven to 400°F. Slice delicata squash into rings and butternut into thin half-moons. Toss with olive oil and salt. Arrange in a single layer on a parchment-lined sheet pan. Roast for 30–40 minutes, flipping halfway, until golden brown and caramelized.

2. Cook the spaghetti squash
Poke holes in the spaghetti squash and microwave for 10 minutes. Cut in half, remove seeds, and shred into strands with a fork. If the squash is still too firm, roast it cut-side down on a foil-lined pan for another 7–10 minutes until tender.

3. Prep your greens
Wash and dry Bibb lettuce thoroughly. Tear into bite-sized pieces. Layer on a serving platter or individual plates.

4. Assemble the salad
Let the squash cool slightly. On top of the lettuce, layer rings of delicata, pieces of roasted butternut, and small fork-twisted nests of spaghetti squash. Add crumbled blue cheese over the top.

5. Finish with balsamic and EVOO
Drizzle generously with balsamic vinegar or a thick balsamic reduction. Add a final touch of olive oil, salt, and freshly cracked pepper.

6. Serve and enjoy
Perfect served warm or at room temperature. This fall squash salad is ideal as a show-stopping side dish, a vegetarian main, or part of a holiday spread.
